At the moment, I use Magic Launch to provide rules for which application to use to open certain files. I just found out that I can use Choosy to work as a selector for any file.

Here is my rule for selecting PDF application: http://glui.me/?i=5m44u74fe84xk09/2015-11-06_at_08.36_2x.png/

What you need to do is to go to ~/Library/PreferencePanes/Choosy.prefPane/Contents/Resources/ and make an alias of Choosy.app and put it into your /Applications folder. Then you change whatever filetype you want to always open with Choosy.app and have the appropriate rule set up.
